A four-hands dinner with Rosie Maguire, paired with wines from Christian Tschida my absolute favorite winemaker from Burgenland Austria. One of those events where everything just aligns—people, food, and energy.

Saltverk at Natural Food Expo
I’ve done many collaborations through the year with Saltverk. This time at one of the world’s largest food expos. In 2026 we served over 3,000 tastings—sharing Icelandic ingredients prepared with their salt to big audience.

Kitchen on the Edge
Cooked at Holmen in a collaboration with the team at Holmen in their amazing Kitchen on the edge series. Two dinners—one rooted in Northern Norwegian produce, the other focused entirely on using the whole cod. It was a beautiful event filled with special events and collaboration.

An evening with Fischersund, Jónsi and Lilja. Jónsi performed while I cooked a five-course menu built around Icelandic wild produce. A rare and special night all organized by Halston Bruce, a good friend.

Pop at Test Kitchen in Hong Kong. Serving 8 course menu with the focus on Icelandic produce and food history.
Telling stories about how preservation shaped Icelandic cuisine. Test Kitchen is a platform for young chef's to introduce their cooking to Hong Kong. A project that is driven with a lot of ambition from Vincent Mui who was also a great host.

I did a two week residency at the fantastic Carousel in London in March 2016 and again one week in February 2017. An amazing experience to work with a very talented group of people and promote Icelandic food culture & produce at the same time.

I was at restaurant E. Ekblom for a week doing a pop up at the festival Food & Fun. I meet alot of really nice people and I loved working with the beautiful Finnish ingredients. Great team at E. Ekblom made sure everything was spot on.

An event in Austin, Texas with chef Magnus Nilsson of Faviken. 5 course menu showcasing best produce from Iceland. The event was about celebrating Nordic Cuisine for his new massive cookbook "The Nordic cook book".
It was a great event that was done in a collaboration with Dinner Lab.

Slippurinn did an amazing pop up at restaurant SKÁL nyc on the lower east side at North Food Festival. We brought a lot of produce from the islands and made a great event collaborating with the place. We event brought our cocktail program with us with all handmade infusions & syrups from herbs & spices of the Islands.
GREENLAND, 2013
Pop up event where in Greenland where one chef Greenland, Iceland & Faroe Islands met and made a two nights dinner. It was a pleasure getting to know Greelandic culture and cook with their amazing products.
I met two great chefs Gutti from the Faroes & Innoraq from Greenland.
